My family loves to make zucchini fries in the summer to go with hot dogs and pasta salad. These are great because you get the crunch of a fry without the grease and calories!
What you’ll need:
zucchini (we used 2 1/2 and had more than enough for three people)
1 cup panko bread crumbs (we used an herb blend to add flavor)
1/2 cup shredded parmesan cheese
a pinch of salt and pepper
2 egg whites
1 cup of milk
Preheat your oven to 475 degrees. Chop up your zucchini into sticks (I prefer mine to be thin).
In one bowl, combine your bread crumbs, parmesan, salt, and pepper. In a second bowl, combine the milk and egg whites. Dip the zucchini sticks into the milk mixture, and then cover in the bread crumb mixture.
Put covered sticks on a parchment paper covered baking sheet and bake for 15-20 minutes (we prefer 20 because we like them crisper).
Unfortunately, we were so hungry that I didn’t get an “after” picture! But trust me, they’re delicious!
